Shahi Paneer
The main dish of vegetarians in North India, Shahi Paneer made of cottage cheese is a thick gravy of cream and tomatoes. It is eaten with rotis, naans, rumali rots etc. Its mild spiced and is said to have evolved from the Mughal kitchens.

Prep time 45 mins
Serves 3-4

  • Boil two onions in for 15-0 mins.
  • Grind it in the mixer to a fine paste.
  • Heat 2 tbsp oil/ghee in a kadai and add 3 cloves, 1 cinnamon, 1 bay leaf. Saute till the fragrance is felt.
  • Add the onion paste, 1-2 green chillies and saute for 3-4 mins on low flame.
  • Add 2 tsp ginger - garlic paste and saute till it turns to a light brown colour.
  • Mix the paste of 1/4 cup cashews and saute for a minute.
  • Add 1/2 cup of yogurt
  • 1/2 cup of cream goes in next, a pinch of turmeric power.
  • 1/2 tsp of garam masala or you can use shahi paneer masala available in the market
  • Add 400 gms of paneer and mix.
  • Close lid and cook for 6-8 mins.
  • If wanted you may garnish with coriander leaves finely chopped.
